Our Story
A Modern Bistro in Paris that Meets Old French Charm
PALYMA, a modern bistro paying homage to Parisian cafés, celebrates the heritage of the 17th Boulevard Saint Jacques, home in the 70s of the PLM St. Jacques and owned by the legendary railway company that once connected Paris, Lyon, and Marseille.
OUR STORY
On march 2026, PALYMA reimagines this heritage, offering a friendly and generous bistro, both in the space and in the plate. Just as the railway once connected regions, Palyma connects people through food, a jovial service and the pleasure of being together.
The iconic Paris-Lyon-Marseille railway line, inspires today the name of the hotel's new Parisian bistro: Palyma.
SIGNATURE DISHES
Paying homage to the first PLM restaurant, Djayi Tounkara and his team serves classics from the French cuisine with signature dishes to share, including the Limousin veal chop
